Position Summary: A Free Reign Restaurants Executive Chef is a leader in the kitchen. It is the responsibility of the Executive Chef to work closely and manage the culinary team in daily production, efficient ticket times, accuracy with inventory and ordering, and thorough communication with all crew members. It is imperative that the Executive Chef works at a fast pace while maintaining efficient products. Duties & Responsibilities: Ensures that preventative maintenance programs are being followed. Upholds all DHEC standards. Maintains a clean and sanitary kitchen including tables, shelves, grills, fryers, saut-- burners, convection oven, flat top range, refrigeration equipment, floors, doors and walls, hood, lights, sinks and dish machine. Makes sure that everyone is working with and using a sanitation buckets. Ensures that the opening, shift change, and closing checklists are being used daily and enforcing the kitchen crew works as a team. Make sure that all kitchen equipment is operating properly. Be sure to communicate with Manager immediately if something is not. Execute proper line check and maintain all food quality is up to the Free Reign Restaurants standard. Make sure that the crew is always following safe food handling practices. Make sure the crew is always using our product labeling system to label, date, rotate and store all food. Manages and assists with the production of daily prep using prep lists and verbal communication while handling, storing and rotating products properly. Assist with checking in and putting away food orders while keeping the storage room clean and organized. Nothing should ever be stored on the floor. Accurately complies with our recipes, portion size, cooking methods, quality standards, kitchen rules, plate presentation, policies, and procedures. Stocks and maintains sufficient levels of products at line stations to assure a smooth service period based on par stock before, during and after service. Attends all scheduled employee meetings and brings suggestions for improvement. Performs other related duties as assigned by the Chef or Manager-on-Duty. Create of fun, hardworking, and productive team environment. Performs calmly and professionally under pressure and helps the culinary crew do the same. Must be accountable for the overall flow and feeling of the kitchen which includes the attitude of culinary crew, the cleanliness of the kitchen, the overall communication with the team, and the quality and presentation of food that is served to our guests. Physical Requirements: Ability to perform the following with regularity Ability to multi-task while maintaining a calm and professional manner. Willing to stand 100% of shift over extended amounts of time. Has above average knife skills. Can carry and/or lifting items that are 70 lbs. or more. Education and Experience Qualifications: Previous experience as an Executive Chef preferred, not required. Has been a Sous Chef for a reasonable period of time. Must have strong communication and leadership skills including motivation and goal setting. Genuinely cares for the overall organization, cleanliness, and success of the kitchen. Has the ability to organize tasks in the order of importance. Has the ability to multi-task, coach and execute under pressure while maintaining a calm manner. Has used or can use our kitchen equipment and machinery. Expert knowledge of the restaurant or organization's cuisine. Advanced culinary skills including food preparation, flavor pairings and other cooking best practices. Ability to develop unique recipes and prep lists. Current knowledge of trends in the restaurant industry. In-depth knowledge of federal, state, and local food handling regulations. Always follows Proper Food Handling Practices: A good Executive Chef always ensures that their peers are also following the proper food handling practices and will correct, teach, and follow up. Always a Team Player: A good Executive Chef is always aware of what's happening on the line and in the kitchen and is ready and willing to help others get the job done no matter who or what. Never Lets his/her Team Down: A successful Executive Chef will always make sure his/her team is fully stocked with product and prep and has properly working equipment. Is Reliable : A successful Executive Chef is always available for his/her team. He/she arrives early and stays late to assure successful shifts. Hygiene is Important: A successful Executive Chef cares about his/her team's hygiene. Always makes sure the BOH crew comes to work in a clean uniform and maintains it throughout their shift and makes sure they have manicured nails and trimmed facial hair. A Great Communicator: Discussion between your BOH crew, managers, and FOH crew; before, during and after your shift is a must for a successful Executive Chef. Communicates daily specials and any products that the restaurant may be low on. He/she is proactive, not reactive! Uses the Provided Tools: Always observe, respect, and complete the tools that have been provided to you. Uses opening and closing checklists, prep lists, inventory sheets and proper equipment procedures to ensure that guidelines and Free Reign Restaurants standards are being met. Takes Care of Their Surroundings: A good Executive Chef cares about the tools and equipment they surround themselves with and takes care of it with proper storing, cleaning, and use. A good Executive Chef also respects an organized surrounding by caring for storage rooms, refrigerators, shelves, and closed areas. Has a Passion for Continued Education: A successful Executive Chef always wants to do better and learn new techniques and recipes. Willingness to Accept Criticism: Even the best chefs still have something to learn.
